Pave a Path to the Heart with Great Food this Valentine's Day
It is well known that the path to one’s heart is through the stomach and Palisades on the Glen Retirement Community in Mississauga has tapped into this wisdom, by raising the bar on retirement culinary experiences.Along with the community’s restaurant style atmosphere and service, one of the community’s strongest draws is its innovative, healthy cuisine crafted by executive chef, Paul Tremain. Residents have often moved into Palisades on the Glen just for the world-class food!
Paul has shared an exceptional recipe with Comfort Life that is sure to delight your culinary senses this Valentines Day. If you are cooking a romantic dinner for a loved one on Feb 14th then try this fruit and nut canape recipe:
Holiday Fruit and Nut Canape
Ingredients:
1 head Treviso (or Radicchio if Treviso is unavailable)
1 head Belgium Endive
1 small bunch Frisee Lettuce
½ cup low fat yoghurt
½ cup chopped Walnuts
½ cup chopped Pecans
¼ cup chopped Hazelnuts
2 tsp Sunflower seeds
½ cup Chopped dried Apricot
1 cup Dried Cranberries
½ cup Dried Dates (chopped)
½ cup Real Maple Syrup
3 tsp Balsamic Vinaigrette
2 tsp Pomegranate Vinaigrette
Directions:
Pull apart your head of Treviso and your Endive until the leaves are separated. You will need two or three good leaves of each for each serving. Lay your leaves out on a serving tray. In a large bowl, mix all the other ingredients together until the fruit and nuts are well coated. Scoop out portions of your desired size onto the leaves and garnish with Frisee lettuce. Decorate the platter with drops of the vinaigrettes and chopped chives. Enjoy!
Taking inspiration from his experiences with street food, makeshift kitchens and ethnic cuisine during his time living and backpacking across South East Asia, Paul, 37 years old, develops a rotating menu of gourmet meals that are also sensitive to seniors’ health concerns.
For this young and ambitious chef, cooking is actually Paul’s second career. After working in radio and television, he pursued his chef training at Liaison College and worked previously in the kitchens of two boutique hotels.
